You may have noticed in my post below that I added peas to my quinoa pilaf. I love peas! They are great fresh but frozen is my go to. Easy, inexpensive, rich in protein, fiber, antioxidants and super satisfying. I was thinking about how you never hear of them as a “super” or healthy vegetable. I’m not sure why??? They may be a bit higher in calories than some green vegetables but they are packed with protein and much more filling than most. Read this for more……ENjjoY! and thanks for following! XOXOXO

This simple recipe is delicious and is packed with fiber, protein, antioxidants and vitamins to keep you healthy and energized all day long. Enjoy!

Ingredients:

2 cups frozen or fresh peas

½ onion diced

1 stalk celery diced

1 carrot diced

1 cup chicken-less broth

Preparation:

Melt the coconut oil in a cast iron skillet. Add the onion, celery and carrot and cook for about 5 minutes until soft. Season with salt, pepper, garlic powder, and smoky seasoning blend; heat for a few more minutes. Add in the frozen or fresh peas and chicken-less stock. Cook for 5 minutes until heated through. Season to taste and enjoy! I love lots of black pepper and nutritional yeast for extra flavor. XO
