Simple Beluga Lentils

I love this simple dish served over fresh greens with sweet potato on the side. Beluga lentils cook up quickly and provide great nutrition including vitamins, minerals, protein, antioxidants and fiber. Unlike green lentils the black beluga lentils provide anthocyanins, the same potent antioxidant found in dark berries.


1 tablespoon olive oil

1 cup beluga lentils rinsed

2 cups water

2 carrots

2 celery stalks including greens

½ large Vidalia onion

Fresh herbs if available I used rosemary & parsley

1 tablespoon vinegar

½ teaspoon sea salt or more to taste

freshly ground black pepper to taste

*Optional: 1 1” piece of Kombu and 1 bay leaf

1 tablespoon cumin

a pinch of cinnamon


Using a large pan heat the olive oil and add onions, carrots and celery. Cook for 5 minutes over medium low heat and season with salt and pepper. Add herbs and spices if using and stir in the lentils and water. Add Kombu and bay leaf if using. Cover the pan and bring the water to a boil. Turn down to low and cook for 25 minutes. Stay close and stir frequently. Enjoy!


Kombu is a sea plant that adds seasoning to your dish. Provides you with minerals and makes legumes easier to digest. Sea plants are also good for thyroid balancing.
