Eat Heal Glow
Artichokes are the perfect addition to this hummus. They lighten it up and add so many nutrients. Artichokes are rich in folic acid, vitamins b, c, and k, antioxidants, potassium, calcium, magnesium, iron and lots of fiber. The chickpeas are high in protein and phytonutrients. This is delicious as is or with olives and crushed red pepper. I believe the key to making great hummus is mixing it in the food processor for 6-7 minutes until it gets very smooth.
Ingredients:
2 cups chickpeas
1-cup artichoke hearts
2 cloves garlic
zest and juice of 1 lemon
1-teaspoon umeboshi vinegar
1 teaspoon Braggs amino acid
pinch of salt
1/3-cup tahini
¼ cup olive oil
Preparation: Mix all ingredients in the food processor for 6 to seven minutes until light and creamy. Garnish with red pepper tapenade, lemon zest, olives and crushed red pepper flakes. Enjoy!!!
