Sweet Potato & Black Bean Hummus

Sweet Potato & Black Bean Hummus 

2 large sweet potatoes

2 cans of black beans well rinsed

4-5 cloves of garlic chopped

2 tablespoons ground cumin

2 teaspoons coriander

1 teaspoon smoked paprika

1 teaspoon chili powder

Juice of 2 lemons or limes

¼ cup chopped fresh parsley

1/3 cup tahini

1/3 cup olive oil

Salt and pepper to taste


Puree all ingredients in a food processor until smooth. Garnish with olive oil, pumpkins seeds and fresh parsley. Enjoy!
