Black-Bean & Sweet Potato Burgers

These burgers are yummy and so nutritious. Feel free to use this recipe as a guide. You could add celery, grated carrots or different seasoning. The black beans are mild tasting and full of antioxidants, protein and fiber. The sweet potatoes contain antioxidants and beta-carotene. They are loaded with vitamin A, potassium and calcium. They contain quercetin, a powerful anti-inflammatory. Serve with cooked greens or a simple salad. Enjoy!!!! 


2 cans or 4 cups of organic black beans (If using dry beans rinse well and add a piece of *kombu to the cooking water)

1 extra large sweet potato

¼ cup organic unsweetened peanut butter

1 ½ tablespoons of ground cumin

1 teaspoon McCormicks hamburger seasoning

½ teaspoon liquid smoke

½ teaspoon chili flakes

1 teaspoon of Italian seasoning

1 tablespoon Braggs amino acid or low sodium tamare

¼ cup tomato paste

1/3 cup fresh chopped parsley

1 teaspoon Dijon mustard

¼ cup of corn meal or oatmeal

¾ cup of finely chopped onion

Sea-salt & black pepper to taste

Bake or steam the sweet potato. Drain and wash the beans and put in the food processor. Pulse until the beans are broken up quite a bit but not completely hummus like. Remove and set aside in a large bowl. Place the sweet potato and remaining ingredients into the food processor and pulse until incorporated. Add the potato mixture to the beans and mix thoroughly. I use an ice-cream scoop to make small burgers. Roll the burgers in the bread crumb-spice mixture and pan fry in a little coconut oil or olive oil. These freeze well.
