Lasagna Joes

Ingredients
For the Sloppy Lasagna Filling and Topping:
2 Tablespoons olive oil
½ package of Gimme Lean sausage
1 bag of Boca crumbles
1 large Portobello mushroom chopped
1 onion finely chopped
3 large cloves garlic finely chopped
½ teaspoon red chili flakes
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon McCormick hamburger seasoning
¼ cup tomato paste
½ cup dry wine
1 cup vegetable broth
1 cup tomato puree or passata
¼ cup plain soy creamer
A few basil leaves torn
1 cup vegan ricotta recipe follows
Salt and pepper
For the Garlic Rolls:
2 tablespoons olive oil
3 tablespoons vegan butter
2 large cloves garlic, finely chopped
1 tablespoon parsley, finely chopped
2-3 tablespoons shredded vegan parm
½ loaf vegan ciabatta sliced
For the Vegan Ricotta:
½ block of extra firm tofu drained
juice of ½ lemon
Fresh basil and parsley to taste
1 teaspoon Italian seasoning
3 tablespoons olive oil
¼ cup nutritional yeast
1 teaspoon umeboshi vinegar
salt and pepper to taste
Mix well in a food processor until ricotta like consistency. Adding a little more oil if necessary.
For the Meat sauce: Heat olive oil in a skillet. Add onion and mushroom and cook for 5 minutes until lightly browned. Add the garlic, and chili flakes and cook 2 more minutes. Crumble in the sausage and cook for a few more minutes. Add the meat crumbles, hamburger seasoning, onion powder, garlic powder, and tomato paste stir until incorporated. Add in the wine, broth and passata and cook for 10-15 minutes. Add the creamer and parsley just a few minutes before building your sandwiches.
For the Bread: Melt the vegan butter and mix in the garlic, parsley and olive oil. Brush the bread with the butter mixture and sprinkle the vegan parm. Lightly toast the bread in a hot oven.
To assemble the final sandwich: Put a couple tablespoons of the ricotta on one piece of bread. Spread the meat-less mixture on another piece and top with a little vegan parmesan cheese. Heat in the oven for 1 minute or place under the broiler for 30 seconds. Add a small handful of arugula before building the sandwich. Cut in half and enjoy!!! XOXO
