Pan Fried Falafel with Cashew Tzatziki

Ingredients:

1 can organic chick peas drained

½ cup finely chopped sweet onion

¼ cup fresh chopped cilantro

¼ cup fresh chopped parsley

Juice of ½ lemon

1-2 cloves minced garlic

1 teaspoon cumin

1 teaspoon coriander

¼ teaspoon cayenne pepper

1 pinch each sea salt and black pepper

2 tablespoons nutritional yeast or oat flour (oatmeal broken down in blender)

2 tablespoons grapeseed oil or coconut oil for frying

 

Preparation:

Mix all ingredients in the food processor until smooth. Transfer into a bowl and using an ice cream scoop to keep the patties uniform form into like sized patties. I like to keep them about 2” in diameter. Pan fry in grapeseed oil or coconut oil for approximately 5 minutes per side, until golden brown.

Tzatziki Sauce

Ingredients:

1/2 cup raw cashews soaked overnight

juice  and zest of 1/2 lemon

1 small clove of garalic

pinch of sea salt

1/2 cup grated cucumber

1 tablespoon freshly chopped dill plus more for garnish

1 tablespoon freshly chopped chives plus more from garnish

Preparation:

Drain cashews and transfer to blender. Add all ingredients except cucumber, lemon zest and fresh herbs. Mix well and transfer to a small bowl. Mix in cucumber and herbs. Garnish with lemon zest and more herbs if desired. Enjoy!

Serve over fresh arugula with celery sticks, sliced green onions, chives and Tzatziki sauce. Enjoy! XOXO
