Quick & Easy Gluten Free Vegan Tacos

Ingredients
½ Vidalia onion
2 cloves garlic
1 15 ounce can organic black beans
1 10 ounce can rotel tomatoes medium spice
1 cup cooked brown rice
1 baked sweet potato
1 avacado
1 teaspoon mccormick hamburg seasoning
2 teaspoons cumin
¼ cup fresh corn kernels (optional)
sliced black olives (optional)
1 chopped scallion
parsley or cilantro
fresh lime
olive oil
elzekian corn tortillas or collard greens

Chop onion and garlic sautee in ½ tablespoons of olive oil. When the onion begins to soften add the cumin, salt and pepper, corn kernels and the tomatoes. Heat for another 5 minutes before adding the rinsed and drained beans, the cooked brown rice, parsley or cilantro and olives. . Heat through and turn off stove. Warm the corn tortillas or rinse and dry the collard greens. Place a tablespoon of sweet potato on the green or shell, top with rice and bean mixture and garnish with scallion, fresh salsa, avocado, and lime zest.

*Optional to add daiya vegan shredded cheese and a dollop of vegan sour cream. Enjoy!!!
