Quinoa & Tofu Pilaf Bowl

1 teaspoon coconut oil
¼ cup quinoa
1 small slice of tofu cut into tiny cubes
4” piece of celery diced
2 tablespoons of finely chopped red onion
2 button mushrooms chopped
1 cup spinach
½ cup of chicken-less broth
¼ cup of water
2 teaspoons nutritional yeast
garlic powder and black pepper to taste
hemp seeds for garnish

Melt the coconut oil in a small saucepan. Add the celery, onion, mushroom, tofu and quinoa. Heat for 2 minutes before adding ½ cup of broth. Cover and bring to a simmer. Cook for 15 minutes until quinoa is tender and water has absorbed. Add garlic powder, pepper, spinach and water. Cover and cook for 2 or 3 minutes until the spinach has wilted. Add in the nutritional yeast and stir gently. Garnish with hempseeds and enjoy!
