Super Simple Raw Vegan Pad Thai

Ingredients for the Pasta:

1 medium zucchini

1 scallion sliced

*Optional carrots, daikon radish or golden beets grated or cut in matchstick slices.

For the Dressing:

Juice of ½ lime

1 teaspoon agave

3 tablespoons tahini

2 teaspoons braggs liquid aminos

1 teaspoon brown rice vinegar

1 teaspoon sesame oil

Garnish:

Sesame seeds

Thai basil

Bean sprouts

Grilled chopped tofu

Preparation:

Spiralize the zucchini using your blade of choice and transfer to pasta bowl. Add scallions and other veggies if using. Whisk together the dressing ingredients and mix with the zucchini. Garnish with sesame seeds, Thai basil and grilled tofu. Enjoy!
