Super Simple Tofu Stir-fry for 1

 Eat Heal Glow 

This is a super nutritious and delicious lunch. Feel free to switch up the veggies using what you have on hand. Sometimes I add a little garlic and crushed red chili flakes. Enjoy! XO

Ingredients:

1 head baby bok-choy

1 slice tofu cubed

½ small Vidalia onion thinly sliced

2 button or cremini mushrooms sliced

¼ red pepper chopped

1 tablespoon sesame seeds

1 tablespoon coconut oil

2-3 tablespoons mirin

a few drops of sesame oil

2 teaspoons Braggs amino-acids

Preparation:

This super simple vegan and gluten free lunch took 5 minutes to make! Heat the coconut oil in a medium sized saucepan, when hot add the onion and tofu and toss around for a minute over high heat browning the tofu. Next add the bokchoy and remaining vegetables. Heat for another 2 minutes and add the mirin, braggs and sesame seeds. Cover and let cook for 2-3 more minutes until the Bokchoy softens. Transfer to a plate and drizzle the sesame oil over top. Serve as is or with brown rice and greens. Enjoy!!!
