Un-Stuffed Cabbage Rolls

Cabbage is a Super-Food with lots of nutrients! It is chock full of vitamins, minerals and it is extremely alkalizing. It is also low in calories and very versatile.

Ingredients:

1-½ cups chopped pecans

2 tablespoons TVP hydrated in the sherry & liquid smoke

3 tablespoons sherry or sherry vinegar

½ teaspoon liquid smoke

1 teaspoon hamburger seasoning

1 large onion

2 cloves garlic

1 cup chopped mushrooms

1 small head of cabbage chopped

1 Tablespoon Italian seasoning

1 teaspoon onion  powder

1 teaspoon garlic powder

2 cans diced tomatoes

12 ounces tomato sauce

¾ cup water

¼ cup sliced fresh basil divided

¼ cup chopped fresh parsley divided

2 tablespoons vegan butter

Freshly ground black pepper and sea salt

Preparation:

Heat the oil in a large saucepan over medium heat. Reduce the heat to low and fry the onion for 5 minutes being careful not to burn. Add the garlic and mushrooms and continue to fry for a few more minutes. Stir in the hamburger seasonings, onion powder, garlic powder, the hydrated tvp and the chopped pecans and stir for a few more minutes. Stir in the  cabbage, tomatoes, sauce, bay leaf, water and half of the fresh chopped herbs. Cover and cook for 30 minutes stirring every 5 minutes.  Stir in the vegan butter and garnish with fresh herbs. Enjoy!!! XOXO

I like this with nutritional yeast or vegan cheese sprinkled over top.

* To make soy free substitute the ground flaxseed for the TVP.
