Vegan Ricotta- Cheeze!!!

Vegan Ricotta-Cheeze 

Ingredients:

1 block of extra firm tofu drained

1 block soft or silken tofu

juice of ½ lemon

Fresh or dry basil, oregano and parsley to taste

1 teaspoon Italian seasoning

1 teaspoon onion powder

1 teaspoon garlic powder

Optional* 2 cloves minced garlic

3-4 tablespoons olive oil

1/2  cup nutritional yeast

1 teaspoon umeboshi vinegar

sea salt or braggs liquid aminos  and pepper to taste

Optional* 1 teaspoon white or yellow miso

Mix well in a food processor until ricotta like consistency. Adding a little more oil if necessary.

Feel free to add arugula or spinach for a veggie packed colorful version! I sometimes mix half with greens and leave half white for a nice contrast of color and flavor.
