Healthy and Easy Salad Dressings

Simple Smoky & Creamy Oil Free Dressing
2 tsp liquid aminos or 1 tsp sea salt
1 mashed avocado
juice of 1 lemon
Lemon Vinaigrette
½ cup olive oil, flax oil or grape-seed oil
Juice of 1 lemon
Sea salt & pepper to taste
Fresh chopped herbs
Optional – 1 teaspoon of honey or brown rice syrup
This is a classic, and simple dressing. Use whatever herbs you like. Use a small whisk to beat the dressing until it emulsifies.
Vegan Caesar Dressing:
¼ cup raw cashews
¼ cup hemp seeds
2 tablespoon pumpkin or sesame seeds
2 tablespoons nutritional yeast
juice of 1 lemon
¼ – ½ cup water
2 tablespoons capers with their juice
Pinch chili flakes
1 clove garlic
Soak the cashews for an hour up to a day. Mix well in food processor or high-speed blender. Add remaining ingredients and mix well. Add a tablespoon of water if too thick. Enjoy!
Zesty Lemon Dressing
2 cloves minced garlic
1 inch grated ginger
juice of 1 lemon
¼ cup evoo
Italian Vinaigrette
½ cup olive oil, flax oil or grape-seed oil
3 tablespoons balsamic, apple cider or red wine vinegar
1 teaspoon Dijon mustard
1 clove of garlic pierced with a toothpick
Black pepper
Optional – finely chopped basil and parsley, chopped olives or capers
Combine oil, vinegar, mustard and black pepper. Whisk until the dressing emulsifies. Add the garlic to the dressing but remove before using. If using the herbs and olives whisk in before serving.
Vegan Green Goddess Dressing
I cup of raw nuts or seeds soaked over night. I like walnuts of cashews.
½ – 1 cup of water
¼ cup chopped parsley
¼ cup of your favorite fresh chopped herbs chives are great!
Sea salt and pepper to taste.
Drain the soaked nuts and place in blender with the water, parsley, salt and pepper. Mix until smooth- if too thick add a little more water. Add remaining herbs and serve. This is good with a stronger green like kale.
Easy Mexican Dressing
¼ cup of olive oil
juice of 1 or 2 limes
1 teaspoon ground cumin
Sea salt and pepper to taste.
Whisk all ingredients together and serve. Great with black beans, tomatoes, avocado and scallions.
Delicious Detoxifying Dressing
2 stalks of celery
1 avacado
juice of 1 lime
½ teaspoon of braggs amino acid or low salt tamari
Freshly ground pepper
Chopped fresh herbs to taste
Optional-1 teaspoon ground cumin
Juice the celery and puree with the avocado and lime juice. Add seasonings and fresh herbs.
Sesame Tahini Dressing
½ cup of tahini
juice of 1 lemon or lime
2 tablespoons rice vinegar
1 teaspoon braggs amino acid
1 teaspoon honey
1 teaspoon freshly grated ginger root
¼ cup of nutritional yeast
Mix all ingredients in the blender and enjoy!
Asian Dressing
¼ cup of sherry vinegar or mirin
juice of one lemon
1 tablespoon braggs amino acids
2 tablespoons water
3 tablespoons sesame oil
1 clove minced garlic
2 tablespoons freshly grated ginger
1 teaspoon honey
3 tablespoons sesame seeds plus more to garnish
1 tablespoon hemp seeds to garnish
2 tablespoons chopped peanuts to garnish
Whisk all ingredients and enjoy! Great with cabbage, sprouts, tofu, or over a stir-fry.
Citrus Sesame Salad Dressing
This dressing is so delicious you will definitely want a second serving of salad. It is rich in protein, omega 3’s, vitamins C & B. Enjoy!!!
Ingredients:
Juice of 1 lime
¼ cup freshly squeezed orange juice
¼ cup nutritional yeast
½ cup hemp seeds
1 teaspoon Braggs amino acids
½ teaspoon toasted sesame oil
1 handful of parsley
1 tablespoon chopped onion
Mix all ingredients in a blender of food processor. Enjoy!!
