Quinoa & Edamame Salad

1 cup quinoa well rinsed
2 cups water
1 tablespoon coconut oil
*Optional – 1-1”piece of kombu to add to water while cooking quinoa
1 cup steamed shelled edamame
1 teaspoon sesame oil
2 tablespooons sesame seeds or hemp seeds
2 tablespoons olive oil
juice of 1 lime
½ teaspoon red chili flakes
*Optional – ½ teaspoon ground cumin
*Optional – 1 handful chopped cilantro or parsley for garnish
*Optional – 2 scallions sliced

Rinse the quinoa in a fine-mesh sieve before cooking. Place it in 2 cups of fresh water and the kombu in a medium pot and bring to a low boil over high heat. Reduce the heat to medium-low, cover with a tight-fitting lid, and simmer for 10-15 minutes until tender. Add 1 tablespoon of coconut oil and allow to sit with the lid on for five minutes. Fluff with a fork and place in a large salad bowl. Add the steamed edamame. Put the lime juice and sesame oil in a small bowl. Add the chili flakes and cumin if using. Whisk in the olive oil. Pour dressing over quinoa / edamame mixture and toss lightly. Add the scallions and fresh herbs. Adjust Salt and pepper to taste. Garnish with sesame seeds or hemp seeds. Serve warm, room temperature or cold. ENJOY!!!
