Collard greens are a great source of phyto-nutrients and have anti cancer forming properties. They contain anti-viral and anti-bacterial properties. They are an excellent source of folate, vitamins c, a,k and lots of minerals. They are mild in flavor and delicious in soups, salads or simply steamed. Sometimes I add beans, nuts and wild rice to this recipe for a 1-dish meal. Enjoy! XOXO

2 large bunches of collard greens stemmed, washed and chopped
2 cups of chicken-less broth or water
1 tablespoon coconut oil
1 small sweet onion chopped
2 cloves minced garlic
Red chili flakes a pinch or more
Sea salt & pepper to taste
Freshly ground nutmeg
Juice of ½ lemon

Umeboshi vinegar
Nutritional Yeast

Melt coconut oil in a large cast iron skillet. Add the onion and cook for 2-3 minutes. Add garlic and chili flakes and cook for another minute. Add collards and liquid, cover and cook for 20 minutes until tender. Add grated nutmeg and salt and pepper to taste. Cook for several more minutes. Remove from heat and add lemon juice. Garnish with vinegar, nutritional yeast and hemp seeds. Enjoy!!!
