Did you know black rice or forbidden rice is not only delicious it is a super-food. It contains more antioxidants than blueberries with less sugar, more fiber and vitamin e. It contains 18 amino acids, iron, zinc, copper, carotene, and vitamins. It is great for the kidneys, stomach and liver. This dish is easy to make and very versatile. Feel free to use your favorite, fruits, veggies, nuts and seeds.

Ingredients For the Rice:

11/2 cups black rice

3 cups water

2 tablespoons sherry

1 1inch piece of kombu

½ teaspoon salt

Cook rice for about 45 minutes with the water, kombu and salt. Add the sherry in for the last 5 minutes of cooking. Keep an eye on the pan and if it dries out add a little more water.

Ingredients:

1 cup finely chopped celery

1 cup finely chopped onion

1 tablespoon coconut oil

1 cup sliced fresh cranberries.

½ cup sliced dried apricots

¾ cup toasted walnuts or pecans

juice of ½ orange mixed with 2 tablespoons olive oil S&P to taste.

Fresh parsley, orange zest and hemp-seeds for garnish

Preparation:

Sautee the Celery and onions in the coconut oil for 3-4 minutes. Toast the nuts and cranberries in a 400 oven for 3-4 minutes. Combine the rice with veggies and dress with the orange vinaigrette. Garnish and enjoy!!! This dish is delicious served warm or at room temperature.
