Mango & Edamame Salsa

This salsa is delicious with chips, over tofu or tempeh or along side your favorite grilled vegetables and black beans. It’s packed with vitamin c, beta carotene, protein and fiber. Enjoy! ox

Ingredients:

2 mangoes diced

5 or 6 plum tomatoes seeded and diced

1 cup frozen edamame thawed and shelled

1 large handful of finely chopped fresh parsley 1 large handful of finely chopped fresh cilantro

1/3 cup finely chopped sweet onion

2-3 finely minced pepperoncini peppers

1-2 cloves of minced garlic

Juice of 2 limes

1 teaspoon ground cumin

1 tablespoon olive oil

Himilayan sea salt and black pepper to taste

Mix all of the fruit and veggies together in a medium sized bowl. Whisk together the lime juice, garlic, cumin and olive oil. Dress and toss the salsa adding salt and pepper to taste. Let sit in the refrigerator for an hour while flavors to meld together. Enjoy!!! XO
