Vegetable Fritters

(Veggies Only Please)

I’m Cleansing!

1 zucchini

1 potato purple if available

1 small onion

½ cup chopped parsley

½ cup chives if available

2 cloves roasted garlic

red pepper flakes

1 cup of mashed cauliflower, celery root or potato

2 tablespoons coconut oil

Salt & pepper to taste

Grate all of the vegetables and season with herbs, salt and pepper. Gently stir in the mashed potato until combined.  Using a 1/3 measuring cup divide mixture and form into patties. Fry in the coconut oil until brown, flip and fry for 2-4  more minutes until crispy and brown. Serve with Avocado cream. Enjoy!!
