Get Your Glow On Carrot Soup

Eat Heal Glow

Ingredients:

2  16 ounce bags organic carrots

1 leek washed and slice

3-4 cloves garlic

½ Vidalia onion

1 tablespoon coconut oil

16 ounces coconut milk or coconut cream

4 cups of water

2 limes

1 cup sliced celery

½ red pepper

1 inch piece fresh ginger

1/2 teaspoon powdered ginger

1/2 teaspoon cinnamon

½ teaspoon fennel seeds

2  not-chick’n bullion cubes

1/4 cup pure organic maple syrup

stevia to taste – just a pinch

½ teaspoon dried thyme or 1 tablespoon fresh

chili flakes

Sea salt & pepper

Preparation:

Preheat oven to 400F

Slice the carrots, onion and leek. Toss with the coconut oil and spread evenly on a baking sheet. Season lightly with salt and pepper. Roast for 20 minutes. Mix all remaining ingredients in the vitamix until smooth. Add the carrot mixture and continue to blend until hot. Adjust seasoning and garnish as desired. Enjoy! XO
