Eat Heal Glow

I made this soup up after oral surgery. I had a complete protein smoothie in the afternoon that held me over quite well. Later my stomach felt like it needed solid food. I made this soup with as many nutrient dense foods as possible. Rich in vitamins, protein and loaded with fiber. It came out really delicious and it absolutely did the trick for my tummy!!! If you’re not a fan of curry you could add lots of fresh rosemary and parsley. Enjoy!

Ingredients:

½ large Vidalia onion diced

1 large celery stalk diced

2 carrots diced

1 medium sweet potato diced

1 cup fingerling potatoes

½ green bell pepper diced

¾ cup lentils

3 cups veggie or not-chicken broth

2 cloves minced garlic

2 teaspoons ground curry

1 1” piece of kombu

1 bay leaf

1 can diced tomatoes with chili’s

1 can water

2-3 handfuls of fresh greens (I used chard)

Preparation:

In a large pan heat the coconut oil, add onions, curry and garlic; cook for several minutes until fragrant. Add celery, carrots, sweet potato, potatoes, lentils, peppers, broth, tomatoes, water, kombu and bay leaf. Bring to a slow boil, cover and cook about 30 minutes until the potatoes are tender. Add greens cover and stir until wilted. Eat as is or m ix till smooth in a blender and add a bit of soy creamer. Garnish with lemon zest, parsley and black pepper. Enjoy!
