My Rachael Ray Challenge Day 129

I vegan-ized Rachael’s Pork Stew and made it into a 30 minute meal. This was filling and delicious!

Ingredients:

1 quart filtered water

3 cubes no-chicken bullion

1 butternut squash cut in 2 inch pieces

3 chicken-less bullion cubes

1 bay leaf

1-1inch piece of kombu

1 7-ounce can chopped green chiles

2 chopped Vidalia onions

2 cloves minced garlic

1-2 bags Gardein beefless strips thawed, or 2 cups of chopped homemade seitan

10 ounces of mushrooms halved

2 tablespoons vegan butter

2 tablespoons sherry

½ teaspoon liquid smoke

1 teaspoon hamburger seasoning

1 teaspoon ground coriander

1 teaspoon ground fennel seeds

1 teaspoon ground cumin

Garnish with sliced red onion & chopped cilantro

Preparation:

Peel and chop the squash into 2 inch pieces. Cover with water and add the 3 chicken-less bullions, kombu, canned chiles, & bayleaf. Cover, and cook until the squash is tender.

Meanwhile cook the onions, garlic, and mushrooms for 4-5 minutes until tender. Add the seitan or gardein and cook until brown. Season with coriander, fennel, and cumin and add in the butter, liquid smoke and sherry and cook for 5 more minutes. When the squash is tender combine the meaty mixture with the squash. Garnish with slice red onion and cilantro. Enjoy!
