Raw, Vegan Sweet Pea Soup

This soup is delicious, nutritious and super quick to make. If you reduce the water it makes a nice sauce for tofu or under a main course. Enjoy! 

Ingredients:

2 ½ c peas fresh or frozen (thawed to room temperature)

1/3 c onion chopped

1 carrot, chopped

1 teaspoon mellow miso

2 tablespoons chopped fresh herbs. (I like mint, dill & parsley)

4 tablespoons nutritional yeast

1 teaspoon Braggs amino acid

1 teaspoon umeboshi vinegar

1/2 c water

zest & juice of ½ lemon

 

In a high-speed blender, combine all ingredients except the herbs and lemon and blend until smooth and warm. Garnish with a little EVOO, lemon juice & zest and fresh chopped  herbs.
