Spicy Sweet Potato & Peanutbutter Stew

This is definitely a meal in a pot. It is flavorful, nutritious and really yummy. Feel free to add some chopped tofu to this stew.

Ingredients:
2 tablespoons coconut oil
2 medium sweet potatoes baked until very soft
1 medium sweet onion diced
1 stalk celery diced
2 carrots diced
3 cloves minced garlic
2 chopped plum tomatoes
1 teaspoon 5 spices
¼ teaspoon cayenne pepper
1 tablespoon red curry paste
1 teaspoon chinese five spices
½ teaspoon cinnamon
Freshly ground nutmeg for garnish
6 ounces tomato paste
½ cup of natural peanut butter
1 bay leaf
1 inch of kombu
2 quarts veggie or no-chicken broth

For garnish:
Freshly ground nutmeg
Fresh chopped parsley
Crushed peanuts
Optional* Orange zest

Preparation:
Heat coconut oil over medium heat in a soup pan. Add onions, carrots and celery. Cook for 5 minutes until the veggies begin to soften. Add garlic, chopped tomatoes, 5 spice, cayenne, cinnamon, salt & pepper. Cook for several more minutes before adding the red curry paste and tomato paste. Mix in well and slowly add 2 cups of stock, a bay leaf, the kombu and the peanut butter. Mix well until peanut butter is incorporated. Transfer ½ of the mixture to a blender and mix well until creamy. Pour the blended mixture back into the pot and slowly add the remainder of the stock until you reach desired consistency. Bring to a boil and let simmer for 20 minutes. Add garnish and enjoy!!!
