Apple-Berry Parfait with Coconut Chia Cream

This delicious parfait is the perfect summer treat. Substitute banana or oranges for the apples for a nice variation. Enjoy!!


3 apples or pears spiralized with smallest blade option

Juice of ½ lemon

Cinnamon to taste

Sea salt

2 tablespoons maple syrup or honey

1 cup mixed berries

Coconut chia-cream pudding

½ cup coconut milk

¼ teaspoon stevia

1 teaspoon Mexican vanilla extract

1 tablespoon chia seed

*Optional granola, mint or chopped walnuts for garnish.

Coconut Cream

½ cup coconut cream

1 teaspoon vanilla

1 dash sea salt

Preparation for the Coconut Cream Pudding:

Whip up the coconut cream, vanilla, chia seeds and stevia with a vitamix or electric mixer. Set aside to allow the chia seed to expand and become gelatinous.

For the Coconut Whipped Cream:

Beat the coconut cream just like whipped cream. Use a cold bowl and cold blender.

Preparation for the Parfait:

Remove the apple stem and spiralize the whole apple. Place in a bowl and toss with the lemon juice, salt, cinnamon and maples syrup; set aside. Layer the apples, cream and berries. Finish with a dollop of whipped coconut cream and garnish with berries, nuts or granola and mint. Enjoy!
