This recipe was inspired by: Unstoppable Fitness Experts “Quinoa Banana Muffins”. I forgot to add the quinoa and switched the remaining ingredients up a bit.

These healthy muffins are filling, full of fiber, protein, omega 3’s, potassium, iron, and they are delicious!!! Feel free to switch up the nuts or dried fruits. Enjoy!

Ingredients:

½ cup water

2 tablespoons ground flaxseed

1 tablespoon chia-seed

2 mashed bananas

½ cup unsweetened applesauce

1 teaspoon Mexican vanilla

¼ cup melted coconut oil

4 tablespoons all natural nut butter of choice

1-1/2 cups oatmeal

1/4 cups ground flaxseed

½ cup coconut flour

2 teaspoons baking powder

2 teaspoons stevia

½ teaspoon sea salt

1 teaspoon cinnamon

½ cup chopped walnuts

½ cup raisins

¼ cup goji berries

Preparation:

Mix the water, 2 tablespoons of flaxseed and the chia and let sit for 5 minutes. Meanwhile, mash the bananas, melt coconut oil and combine with peanut butter, applesauce and vanilla. Add flax eggs and combine.

In a large bowl mix dry ingredients. Make a well in the center and add in the wet ingredients. Stir to combine and add in the walnuts, goji berries and raisins. Scoop into lined muffin tins and bake at 325F for 20-25 minutes. Enjoy!!!
