Blueberry Lemon Scuffin

1 cup coconut flour

1 cup almond flour

½ cup flax, chia, coconut mix or your favorite flour

½ teaspoon baking soda

¼ cup melted coconut oil

1/3 cup pure maple syrup

3 organic eggs

zest and juice of 3 lemons

1 teaspoon Mexican vanilla

1 cup blueberries

cinnamon for dusting tops


Preheat oven to 350F

Mix dry ingredients in a large bowl. In a small bowl mix eggs, add remaining wet ingredients and stir into dry mixture. Gently fold in the blueberries. Grease 12 muffin tins with coconut oil and fill. Sprinkle with cinnamon or cinnamon sugar.

Bake at 350F for 20-25 minutes. Cool on cooling rack. Enjoy! XO
