Cacao-Nut Butter Power Cookies!

No Guilt necessary for these little bites of chocolate peanut deliciousness! These were inspired by the chocolate chip version. I ran out of chips so added cacao and changed it up a bit. They are full of protein, fiber, antioxidants and super foods. They are great as desert or as a protein bar. Enjoy!!!

Ingredients:

1 cup of old fashioned oatmeal

½ cup lucuma powder

¼ cup almond milk mixed with 2 tablespoons chia seed

1 teaspoon baking powder

2 cup cooked chick peas

1 teaspoon Mexican vanilla

½ cup cacao

½ cup natural peanut butter

½ cup natural almond butter

2 teaspoon stevia

4 pitted dates

1/3 cup maple syrup

pinch of salt

Preparation:

Preheat the oven to 350F. Mix the oats in a vitamix of food processor until they become flour. Add the remaining dry ingredients and mix well. Add the almond milk, dates, nut butters and vanilla and mix until combined. Mixture will be very thick. Form into small balls and place on parchment lined baking sheet. Press down with fingers and bake for 8-10 minutes. Enjoy!!
