Chocolate Chip Nut-Butter Delights!

You can feel good about eating these gluten free, vegan cookies. They are full of protein, fiber, vitamins, antioxidants, super-foods and deliciousness!!!


1 cup oatmeal

½ cup lucuma powder

2 cups cooked chick peas

1-teaspoon baking powder

½ teaspoon baking soda

1-teaspoon vanilla (I like Mexican)

¾ cups nut butter (I used almond and peanut)

1-teaspoon stevia

¼ cup maple syrup

1/2 cup vegan  chocolate chips


Sea salt over top before baking

1/4 cup chopped walnuts

1/4 cup goji berries


Preheat oven to 350F. Mix the oatmeal in the food processor until it becomes flour. Next add the remaining dry ingredients and mix until combines. Add the chick peas, vanilla, nut butter and maple syrup and pulse until well combined. Add in the chips, nuts and goji berries if using and store until incorporated. Prepare a large cookie sheet with parchment paper. Roll the batter into balls and flatten with your fingers or a glass. Bake for 10 minutes and enjoy!!No one will believe they are healthy!!! OXOXOX
