Healthy Fudgy Super Brownies

½ cup coconut sugar

¼ cup almond butter

2 teaspoons stevia or honey

¼ cup brown rice syrup (maple syrup will work)

¼ cup melted coconut oil

1 teaspoon pure vanilla extract

2 flax or chia eggs (1 egg = 3 tablespoons water + 1 tablespoon ground flax or chia seed)

¼ teaspoon salt

¾ cup cacao powder (unsweetened cocoa will do)

1/3 cup buckwheat flour

¼ cup almond flour

2-3 tablespoons nut milk

¼ cup cacao nibs

¼ cup mini vegan chocolate chips

½ cup chopped walnuts

Optional for garnish – goji berries, coconut flakes & pumpkin seeds


Preheat oven to 325 F and line an 8 inch pan with parchment paper.

In a medium bowl mix together coconut sugar, almond butter, stevia, brown rice syrup, melted coconut oil, vanilla extract and chia eggs.

Add the cacao and the flax eggs. Slowly fold in the flours and the salt. Mix in the walnuts, cacao nibs and the nut milk.

Spread mixture into the prepared pan. Smooth batter and garnish if you choose!

Bake for 30 minutes, rest for 1 hour before cutting. Serve as is or refrigerate for a few hours and then cut into squares.
