Pumpkin Power Muffins

gluten free & sugar free

Ingredients:

1 cup coconut flour

½ cup almond flour

6 eggs

1 teaspoon baking soda

a pinch of sea salt

1 cup pumpkin puree

1 teaspoon pumpkin pie spice

1 teaspoon cinnamon

3 tablespoons melted coconut oil

½ cup pure maple syrup

 

Optional additions:

1 tablespoon honey or 1 teaspoon stevia *optional if you like sweet muffins

½ cup chopped walnuts

½ cup raisins, chopped dates or goji berries

1 tablespoon chia seeds

ground flaxseed for sprinkling on top

 

Preparation:

Preheat oven to 350F

Mix eggs in a large bowl, add remaining ingredients and mix well.

Scoop into treaated muffin tins. Bake for 20-25 minutes. Cool in pan for 15 minutes, remove and place on cooling rack. Enjoy!
