Raw Vegan Choco-nut Balls!!!

Raw Vegan Choco-nut Balls!!! 

2 cups organic unsweetened coconut

1 cup organic unsweetened dark cacao

¼ cup of hempseeds

2 tablespoons melted organic coconut oil

1 teaspoon pure Mexican vanilla extract or ½ teaspoon coconut extract

½ to ¾ cup brown rice syrup or coconut nectar

1 tablespoon raw local honey optional

1-2 teaspoons stevia optional

½ teaspoon baking soda (alkalizing and brings out flavor)

These are really easy to make and the ingredient amounts can be adjusted to taste. I don’t like mine too sweet so I use the brown rice syrup, 1 tablespoon or raw local honey and the stevia.

Mix all ingredients together with a heavy wooden spoon. With oiled hands roll cookies into balls about the size of a walnut or cocktail meatball. Roll in more coconut or cocoa. Freeze for 2 hours. Enjoy!
