Spicy Gingerbread Powerballs

10 pitted dates

½ cup GF oatmeal

1/2 cup unsweetened coconut flakes

½ cup raw walnuts

1 scoop vanilla Complete Protein Powder

1 teaspoon Mexican vanilla extract

1 tablespoon pure maple syrup

1-2 tablespoons pure blackstrap molasses

1 teaspoon cinnamon

1 teaspoon ginger

freshly ground nutmeg to taste

a pinch of cloves or allspice

¼ teaspoon baking soda

¼ cup nut butter


Put the dates into the food processor and pulse until they are all finely chopped. Add the oatmeal and coconut flakes and mix well. Add remaining ingredients and pulse until fully combined. I use the small side of a melon scoop to make small equal sized balls. Freeze until ready to enjoy! XO
